The temp probes supported by the MX series are Dallas 1-Wire devices. These come with 3 connections, +5V, Data and Gnd. If D-Tek's Inline Temp Probe is a Dallas 1-Wire device, then the MX series can support it.
I checked the link you gave but did not see that there are two wires to the Inline Temp Probe. Do you have some kind of data sheet?

Thanks for your help guys, here's a photo of the inline probe...
As you can see it's only got 2 cables, it uses a standard 10k ohm thermistor -50 - 110 Deg C (320.2 - .7579 kohms).

A "1-Wire" device is digital. This sensor, since it uses a thermistor and is only two wires, is analog. Basically one wire on each end of a resistor that changes value with changes in temperature. You would need to set up a current source through this device then feed the resulting voltage drop to a D/A converter for measurement.
