Matrix Orbital displays only support Dallas One Wire temperature probes, so the ones that you have from your digidoc will not be usable.

Where might one buy "Dallas one wire" style probes /etc.. ?

Joy!!! time to spend abother 60$ on probes... CPU/GPU/Northbridge/Vid RAM/ Mosfets...
