When communicating to the display, please ensure you are using 8 bits data, no parity, and 1 stop bit. You might also try using a shorter cable and ensuring your host and the display have a common ground connection.

The LK205-25 has a 128 byte input buffer, which is difficult to fill even at 115200 baud. Should the buffer fill the display will drop characters, at which point you might consider reducing the baud rate or adding delays.

Yes, all GTT firmware is field upgradeable. You'll simply replace the upgrade.bak file on your SD card with the most recent version from http://www.matrixorbital.ca/software/GTT2.0/GTTFirmware, and cycle power.
