Thermal Probe replacement wires

I was wondering if it was possible to replace the wires on the DAllas 1 Wire thermal probes with different wire - I have a silver theme to my case and have used silver plastic coated wires internally. Will the thermal probes still work?

The thermaltake 120mm fan I have running my radiator is rated at 0.14 - 0.43 amps - will it work on a high power GPO? If not, can I put a resist...
