Are there any other functions or uses for the dallas one wire connectors other than temp probes or digital pots? i have a few spare mate connectors and was wondering if i could utilize them?

If you have a specific question regarding a device, just ask!! :D

What is the model number of the DOW probe? They have an econo, normal, high-precision, etc. I think the normal one is DS18S20, but I'm not too sure.

I like the digital potentiometers!

Does anyone know if you could feasibly hook these into LCDC? Then you could have an auto and a manual mode (selected between by a keypad button...) with the digital potentiometers controlling fan speed while in manual, and maybe you could change them to something else while in auto, volume? something like that

Would be quite cool I think
